Preheat Oven 350 degrees, use a springform pan for best results.

6 to 8 slices

Ingredients:

  • 4 quarts cooked Penne or Rotelli Pasta (4 qts/3 lbs dry)
  • 3 cups small diced red bell peppers
  • 4 cups baby spinach, lightly packed
  • 2 cups small diced Smoked Gouda Cheese

 

Dressing:

  • 2.5 cups of mayonnaise
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of salt
  • 1 tablespoon of granulated garlic
  • 1 tablespoon of sugar cane
  • 1 tablespoon of smoked paprika
  • 2 teaspoons of pepper
  • A dash of cayenne pepper

Directions

  1.  Cook pasta in salt water and cool properly.
  2.  Cool on sheet pan but DO NOT run cold water over the pasta. It will wash away the starch and alter the flavor.
  3. Using a large bowl, combine all dressing ingredients and whisk well.
  4. Taste to make sure it is not too spicy and alter if needs be.
  5. Add pasta and vegetables. Mix well
