Preheat Oven 350 degrees, use a springform pan for best results.
6 to 8 slices
Ingredients:
- 4 quarts cooked Penne or Rotelli Pasta (4 qts/3 lbs dry)
- 3 cups small diced red bell peppers
- 4 cups baby spinach, lightly packed
- 2 cups small diced Smoked Gouda Cheese
Dressing:
- 2.5 cups of mayonnaise
- 1/4 cup of apple cider vinegar
- 1 tablespoon of salt
- 1 tablespoon of granulated garlic
- 1 tablespoon of sugar cane
- 1 tablespoon of smoked paprika
- 2 teaspoons of pepper
- A dash of cayenne pepper
Directions
- Cook pasta in salt water and cool properly.
- Cool on sheet pan but DO NOT run cold water over the pasta. It will wash away the starch and alter the flavor.
- Using a large bowl, combine all dressing ingredients and whisk well.
- Taste to make sure it is not too spicy and alter if needs be.
- Add pasta and vegetables. Mix well
